INGREDIENTS
For the basic pasta, all you need is flour, salt, eggs and extra virgin olive oil.
PROCESS
1. First we carefully mix flour with salt and add eggs and olive oil. To have pasta flavoured with herbs or spices, add it directly to flour before eggs and oil.
2. We are whisking the mixture manually, to have better control of the thickness. First, whisking the eggs and slowly incorporate the flour from the edges. When it becomes too thick we move it to a flat surface dusted with flour for kneading. When dough is ready, it rest 30min in a warm place covered in plastic wrap.
3. We use rolling pins and hand cranks for rolling out the dough. It’s done very carefully to have a perfect thickness.
4. Then, depending on a type of pasta we cut it into desired shapes.
